I am doing my first doll and it happens to have open eyes.  Which are the best eyes to use and how do I insert them?

Depening on the kit, secrist eyes are the nicest. Are they a round eye or oval. You can warm the head and insert from the front or cut a flap at the back and position them and seal the flap and eye into position with E6000 glue.
